8 Eggs
3 Tbsp Olive Oil
1 Tbsp Garlic Paste
1 Tbsp Ginger Paste
1 Tsp Coriander Powder Or fresh coriander, if you have it.
4 Green Chilies
2 Onions, Chopped
½ Tsp Paprika
½ Tsp Turmeric
½ Tsp Cumin
A Pinch of Salt

Dim Bhuna is an egg curry popular in Bengali/Bangladeshi cuisine. Simple to make, a pleasure to eat; good luck eating just one egg!

Boil the eggs in a pot and rinse. Get rid of the shell and set aside for now.

In a pan, heat some oil and fry the eggs just a little bit with a pinch of turmeric and salt. In another pan, heat the rest of the oil and add the onions. Toss around for 1 minute and add the pastes. Add all the spices and salt.

Pour ½ cup of water and cover. Reduce the heat to low and cook for 5 minutes.
Add the chilies and toss around some more.

Now add the eggs and toss for 2 minutes.
Add the coriander.
Take off the heat and serve hot.
