1 Tbsp Parsley, Chopped
¾ Cup Vegetable Broth
To-Taste Amount Salt
To-Taste Amount Pepper

What is Paprikash? Paprikash is a name for dishes similar to the Hungarians’ goulash; sour cream and paprika are some of the main ingredients, along with mushrooms (gomba), such as for this mushroom paprikash. It is often served over spätzle (spaetzle, a kind of egg noodle), rice, or quinoa, but it also can also be served as a soup. Paprika selection in this dish, as in all Hungarian dishes, is very important for the taste and flavor of the finished product; while milder paprika is usually a brighter red color, spicier paprika is darker and more brown.

In a skillet, heat up the canola oil.
Add onions, garlic, and saute until they start turning brown.

Bring in the pepper and tomato cubes and saute them for 2 minutes on medium heat.
Add mushroom, paprika, salt, and the pepper, and stir them well.

Add vegetable broth and cook until the mushrooms start to soften.
Lower heat and mix in the sour cream.

Cook the paprikash for another 3 mins. until it is all done.
Sprinkle the dish with the chopped parsley, and serve it over whole wheat pasta, quinoa, or brown rice.
