Puff pastries and puff pastry dough might not seem to belong here on Everywhere Fare, for it isn’t quite a traditional offering, is it? However, puff pastry dough forms the foundation for some other recipes on this site (such as our recipe for Umm Ali, the Egyptian bread & almond pudding), so here’s our recipe for a semi-challenging puff pastry dough.

This makes about 500-525 grams of dough.

In a large bowl, sift the flour into it and add the salt; then add the butter in thin slices (to better allow it to break down). Add the water into it, pausing once you've emptied about three-quarters of the water into the bowl. With your hands, mix together, making sure not to break down the butter entirely (the chunks will help the "puff") until you have a hardened dough ball, and then add the rest of the water if you think you require it. Cover and stick it in the fridge for 15-25 minutes.

On a large board or open counter space, you'll need to flour the surface to prevent the dough from sticking. Now, we'll need to roll out the dough in a rectangle, making the length to width ratio about 3:1. Then, fold the rectangle in on itself into thirds. From here, you now roll this new rectangle out again into a larger one, folding into thirds once more, as well. You may repeat this again once or twice more if you want to have a flakier finished product.

When you're satisfied, fold the dough into a manageable size (gently!) and wrap it in plastic, allowing it to cool once more in the fridge for at least 20-35 minutes before using the puff pastry dough further.
