3 Onions, Chopped
½ Cup Tomato Paste
110 Gr (4 oz) Butter
1 Medium Tomato, Chopped
3 Cloves Garlic, Diced
1 Bunch Coriander, Diced
1 Bunch Parsley
1½ Tbsp Red Chili Pepper Flakes
To-Taste Amount Salt
3 Bay Leaves
2-3 Cups Water

Ostri: Georgian Beef Stew Recipe (ოსტრი)





Ostri is a beef stew dish often prepared for holidays and celebrations. It is considered as luxury dish in Georgia, and foreigners tend to love it.



Bring pot with about 2 cups of water to a boil. Cut the meat into small cubes and place in the water, turning down the heat.
Let the meat chunks slow-boil in the water for 1½-2 hours, allowing them to become tender.


When you feel that the beef is tender enough, remove the pot and empty all the water/broth from it into a container; save this.
You can set the pot with the meat back onto the stove for the following steps, or transfer them to a frying pan for more ease.


Add the butter to the pot on medium heat to begin a saute process. Add the chopped onions and allow them and the beef to brown for about 6-8 minutes.


Add the chopped herbs, tomatoes, tomato paste, garlic, salt (to taste), bay leaves, and red chili pepper, along with the broth you saved and stir for another 5 minutes before serving.
