½ Kg Tomatoes, Cubed
1 Cucumber, Cubed
1 Small Onion, Cubed
1 Bell Pepper, Cubed
½ Bunch Parsley, Chopped
150 Gr Sirene (a Ewe's Milk Cheese) Ewe milk cheese might be hard to come across, so just use a crumbly cheese, such as Feta.
To-Taste Amount Salt
To-Taste Amount Vinegar
To-Taste Amount Sunflower Oil

Shopska, sometimes referred to as simply “Bulgarian Salad,” is quite popular, and perhaps the most famous dish from the Eastern European country. This unassuming salad actually just won first place as the most popular recipe in a 2014 European Parliament initiative called “A Taste of Europe.” However, this salad is not so “traditional,” as it seems to have been created decades ago, back to the early socialist period, when the state-owned travel agency Bal­kant­our­ist created a salad to better reflect Bulgarian tastes. Nonetheless, Shopska salad has become a staple dish in Bulgaria; try it yourself to see why!
