Polewka Piwna / Zupa Piwna: Polish Beer Soup Recipe

A beer in soup, you ask? The Polish people seem to like to consume hot beer, whether they make a drink out of it or a soup like this one called polewka piwna or zupa piwna. It is a bit of a sour soup, and great on hot days when served cold, and for cold days when served hot (yes, serving this soup cold is just as popular as serving hot!). Serve in a bowl with some curd cheese for a true taste of Poland. Smacznego!

Steps

1
Done

Put the egg yolks and sugar into a pot. Mix for a few minutes, until mixture changes to a brighter color.
While stirring, pour the half cup of cream.

2
Done

Turn the burner on low heat, so that the cream heats slowly.
When the mixture becomes slightly warm, pour the beer in.
Add cloves and cinnamon to taste.

3
Done

As it heats, the soup will start to thicken. When it reaches a medium consistency, turn off the burner.

4
Done

Cut the curd cheese into small chunks.
Lay out some bowls and put some curd cheese chunks into the bowl, then pour the beer soup into the bowls on top.

5
Done

Garnish with rye croutons, if desired.
Smacznego!
